Attack Phase Vanilla Yogurt

I have realized that on your 5th day on Dukan attack phase you get pretty good at your meal plan. For some reason I found the plain Greek yogurt that is allowed is kind of bitter. Here's my pleasant solution.

Take your yogurt and give it a good stir. Place however much you want in your bowl. Mix a good amount of truvia or spenda to sweeten depending on how much you have. I like to put about a nickel size. Continue to stir. Add Vanilla extract and stir, stir, stir until it is all blended.. It's so yum!


Holy Halley Meatballs

This is my personal recipe to help get me through the Dukan diet. It is amazing and delicious and there is nothing diet tasting about it! Please enjoy!

preheat oven to bake at 365

1 package of ground buffalo meat
garlic powder
red pepper flakes- optional
worcestershire sauce low sodium
1 egg
1 1/2 whole wheat bran
pinch salt
pepper


mix all of it together in a bowl with hands till the meat is in one giant ball
take small pich and roll in your hands and place on cookie sheet until the meat is all in balls
put in oven and bake for 12-14 minutes until golden

stuff your mouth and don't feel guilty!!! yuuuummm

Pecan Bars

I took these bars to a work party bake sale and they went over wonderfully. It's so easy you gotta try it for the holidays. It's wayyyy better than pecan pie. Try try try it!

Ingredients

Crust:

  • 1 1/2 sticks (3/4 cup) cold unsalted butter, cubed, plus more for dish
  • 1 1/2 cups unbleached all-purpose flour
  • 2/3 cup light brown sugar
  • 1 teaspoon kosher salt

Filling:

  • 1 stick (1/2 cup) unsalted butter, softened
  • 1 cup light brown sugar
  • Pinch salt
  • 1/3 light corn syrup
  • 1/4 cup unbleached all-purpose flour
  • 3 cups coarsely chopped pecans

Directions

Preheat oven to 350 degrees F.

Line a 13 by 9-inch baking dish with foil allowing an overhang about 2 inches off the sides. Butter the foil.

In a food processor, blend together flour, sugar, butter and salt until the mixture resembles coarse sand. Add 2 tablespoons cold water and mix until the dough just holds together. Press dough into bottom of buttered baking dish and bake in oven until golden in color, about 20 to 25 minutes.

Meanwhile, make the filling. In a stand mixer fitted with paddle attachment, add the butter, brown sugar and a pinch of salt and mix on medium speed until light and fluffy, about 3 minutes. Add the corn syrup, flour and pecans and mix until just combined. Spread the filling over the baked crust and bake until golden brown, about 30 to 35 minutes. Remove the dish from the oven and allow it to cool completely in the pan.

Remove from pan by pulling up the foil sides and putting it on a cutting board. Cut bars in desired size with a sharp knife and arrange them on a serving tray. Can be stored in an airtight container up to 2 days.

Fall to your knees

Happy Fall everyone! With Fall comes Thanksgiving. I think with the holiday madness it's hard to sit down and give thanks. I realized how important this was today. I came across my dear friend Casey's facebook page today and my heart and mind were filled with all sorts of feelings. Casey passed away from cancer about 7 months ago. She left behind a daughter, boyfriend and extended family. I thought immediately how lucky I am to have known her. The most amazing thing is when she was taken, God put Seth in my life and for that I cannot be more thankful.

Today as I drove home from work I saw the leaves falling and the temperature was just right. I was once again thankful. I had just met the nicest people and I was telling my Mom all the excitement that had happened from today. I clicked over to talk to Seth who had called to tell me he had landed at his destination. He was telling me how difficult his day had been, but I smiled so big when he told me that he wasn't discouraged, he was just going to keep rolling because everything that had happened was out of his control. Wow.. I am so thankful to have such an amazing and positive person in my life.

I literally was on cloud nine. I sat down at home and turned on the tv to Bravo.. I rarely change from this channel.. I'm very thankful for Real Housewives. About an hour later I got a call from a dear friend in tears telling me that her sweet boyfriend had cancer. It took all I had to hold back my own tears. My heart ached for both of them. I wanted to support her through this time because I know how great of a girlfriend she is and how much they love each other. I was so thankful to have a friend call on me. So please say a prayer for my sweet friends as they go through this together. I think these things that happen in our lives are God's way of telling us to be humble and to be thankful for everything he has given us.. I know I felt that today and I'M SO THANKFUL!

Here are some pictures of a friend from college's new Baby's room.. I think its the cutest ever. I love the look and feel. I know babies can't see color for awhile so why not make it about the Mom. This mama nailed it.. and her babies name is precious too! I'm a big plan ahead person so I already know the names of my unborn children... now I'm trying to get ahold of the room in a house I don't have.. ahhhh such dreams haha.
